Nah, I know how it works. It just sometimes happens that Asterix bumps into me after he pressed the button, and then he doesn't want to double jump anymore

My guess is that there's a lock under ground and if you jump over the fence no other locks should be able to activate
no, the 30 helmets lock is a seperate lock
it does not effect the 70 Romans lock
since it's not a real lock, but just changes the talking option of the spy
