I saw it is possible to kill them 3 at the same time... is it just luck ?
you have to hit them either completely left or completely right while or shortly after they turn around. the canon ball will then bounce of the first hit army into the second army. All three is theoretically possible, but just luck

No, it depends on how the second army gets hit. If the second army is positioned like the first one, then there is a chance to hit the third one.
But you can't control the way the second army gets hit, so as I said, it's just luck
