No helmets is impossible, the spy asks you them twice
How many helmets we need? 750 ?
To answer any question about that topic, a noHelmet category that does not count the required ones is not possible because there are helmets on the ways in tunnels for instance that are impossible to avoid...

I think Cheat% will be interesting
It would be fly_over_all_the_levels% ... I don't think this would be very intersting... :/
Sometimes you can teleport and skip some battles that you can't skip by normal ways
I've just had a fun idea... Boar% You must hit (or kill) every boar in the game
But you need to remember many different coordinates and to fast write to get fast Cheat%
Of course we can make more than 25 categories,but...
Yeah, but I'm just throwing ideas for people who may be bored of doing the same kind of runs, I'm not asking for more official categories.
In fact, I've just got another idea: Merchant%. You must buy something at every merchant
To be honest, I don’t really understand this "variety of categories". Most of the runners are in Any%. But there is still Potion%, Combo% (there is only 1 Noxus, lol), Low%, at least 100%, which running almost no one.

Well, I don't really get your point. If you want to try, then just try it. I consider Gallery% and Combo% are pretty much the same category, because it's just helmets collection...
More categories would bring more variety, because 100% is (Combo+Gallery+Laurel)%.
