I only get this much wood for a shit ton of sticks which equals profits from fletchers (lots of emeralds) which I then use for enchanting books to upgrade my gear

I feel like just going for Bamboo is far faster than collecting wood. As you can just break the bottom piece and collect an entire plant. That combined with how fast they grow just makes it really efficient.
