I guess it also effects the vertex colors of the converted ground to geometry conversion

Yes, it's to allow you to determine if the walls in your collision got correctly detected as walls or incorrectly as grounds.

yeah, a flag used by most ceilings, even though ceilings would work even without the flag

basically any ground you can walk on will also work as ceilings if you jump to it from below (another ground below)
