You need make, because cmake generates a makefile (which builds the source).

Sure, you can invoke any compiler from your shell, but you'll be recompiling every file (unless your script is clever, which you likely don't want to write in a shell script). Make is MADE for C/C++ building scripts, so it does this for you. (It can do much more though).
